Barbecue Pits
Barbecue pits are one of the oldest forms of bbq and they are still one of the simplest. They require a minimum of equipment - barbecue pits can be dug practically anywhere. Of course, when many people talk about barbecue pits, they are referring to a bricked in barbeque pit such as one of the more or less permanent campground barbeque pit installments that you can find at campgrounds around the United States. Barbeque pits can also refer to a larger standing barbecue pit which is nonetheless made from bricks and a permanent fixture. Similar in function to the barbecue pits that you can built from free barbeque pit plans are barbeque smokers. These give you the same kind of long term barbecue cooking that lets you soak in the flavor of the burning coal or wood, but they are somewhat portable. The portable fire and bbq pits known as barbecue smokers are the size of a tall and large cabinet, generally made from stainless steel, and capable of holding a large amount of meat as it cooks for a long time at a high temperature. Barbeque smokers and recommendations for how best to use them can be found at a barbeque smokers commercial site online; it is relatively rare to find large barbeque smokers at a typical outdoors goods store or cooking goods store, although occasionally you may get lucky. Barbecue smokers are generally considered as being for people who are commercially producing barbecue food and have to be able to move around, i.e. do not have access to their own permanent barbecue pits.
While many people call the act of grilling that is popular around the United States during the summer "barbecueing", the truth is there is a difference between grilling and barbecueing, as grilling is a fast cooking process over a source of high heat, and barbecueing takes place over a longer time with a lower source of heat. Barbecue pits and barbecue smokers allow you to get the soaked in barbecue taste.
